Recipes Randall Farms prides itself on a family atmosphere, so this page is designed with your family in mind. Every two weeks I'll be updating and sharing new home-style recipes that my own family enjoys. I'm a mother of seven and grandmother to three more, so I've had plenty of experience in the kitchen, but the "Monday-is-spaghetti-and-Tuesday-is-tacos" routine is not for me. There are so many wonderful ways to prepare meals that it's a shame not to experiment a bit. Most of the recipes I'll share with you take very little effort, although a few of the special occasion recipes may take a little longer. My goal is simple, healthy recipes that both kids and adults can enjoy. Here are two of my favorites. When all seven children were still at home, feeding two adults and all those hungry kids on a little over $100 a week was the challenge of a lifetime. The health benefits and relatively low cost of chicken made this meat a staple for us. I serve Tropical Chicken over fluffy steamed white rice with a fresh vegetable or cool, crisp green salad. Nothing is better on a lovely summer evening. Tropical Chicken 1/3 cup soy sauce
In a large plastic bag, combine all ingredients except the chicken. Remove 1/3 cup for basting, cover and refrigerate. Add the chicken to the ingredients in the bag, coat and refrigerate overnight. Drain and discard the marinade. Grill chicken until done (when juices run clear and meat thermometer reads 170 degrees). Enjoy!
Pork Chop Night Chops 4 boneless pork loin chops
Cook pork chops in oil in a skillet until brown on both sides. (For pork, that's about eight minutes.) Add onions and cook until they are tender. In a bowl, combine pineapple juice, brown sugar, vinegar, and salt, then pour over the pork chops. Cover and simmer for 15 minutes or until meat is tender. Easy and delicious!
